Kate checked out a recipe book at the school library the other day. It's all egg-based recipes. We've found a favorite! It's one we have heard of before, but just never tried. Rolly-poly omelettes. In each ziplock bag add 2 beaten eggs, salt, pepper, and favorite toppings. We don't have many great omelette toppings right now, but she diced some red and green bell peppers with shredded cheese and minced onion. Everyone gets their own favorite toppings! Just drop them in boiling water and cook for 15 minutes. The vegis are PERFECTLY cooked even! Not mushy, but not too crunchy either. I've heard of these used at trek, camping, girl's camp, scout camp, etc. The secret: They grow a LOT while they cook! Don't be tempted to add "a little more" because it looks like too little ;) AND: the girls like making them! For dinner tonight (and last night -- repeat performances are sometimes good) Sabrina made pancakes while Kate made the omelettes. via Facebook
