Tonight Michael had a waffled ham and cheese sandwich. No, make that TWO waffled cheese sandwiches! They clearly got allllll the thumbs up. Lizzie and I had waffled quesadillas. They were quite successful as well. In terms of the ideal quesadilla, a griddle or pan works as well, or better -- more of the surface of the tortilla becomes crispy. The tortilla is already so flat and firm that the waffle iron doesn't add crispy ridges, of course, just leaves square crispy sections. Because it is cooked hot and closed, though, the cheese reaches a delightfully volcanic consistency I generally lack in the stove-top variety, which we really enjoyed. Overall, very tasty. If I had all the usual comforts of home it's probably 60/40 whether I'd choose the stove / griddle or waffle iron to make a standard tortilla and cheese quesadilla (favoring the first). In a pinch if it's just me and my waffle iron, though, I'd find a quesadilla lovely. via Facebook
