Tonight I tried another twist on a classic: zucchini lasagne. No noodles! I made the sauce with ground beef, onion, garlic, usual seasonings. Then instead of a can of tomato sauce I used several fresh tomatoes from my garden. I blanched and peeled them, then removed the top bit and pureed them. Yes, it was very watery, but I just boiled the sauce down to a nice consistency. I used long slices of zucchini in place of noodles and chopped the left over bits of zucchini and tossed it into the simmering sauce. Tonight was game night (all three teams won tonight!) so I took a chance on the delay / bake / warm settings. Worked perfectly! I put it in the oven before we left, and we came home to fresh hot lasagne that had just finished baking and was being kept warm. Michael has not tried any (I'm not surprised), but the girls seem very happy with this variation.
